In this specific case, the proportion of wines from previous vintages varies from a minimum of 15 to a maximum of 30 percent, depending on the vintage. The choice of a high percentage of Chardonnay is the basis of Laurent-Perrier's style and personality. After blending, the wine is bottled for frothing and is aged on its lees for no less than 4 years in the cellar. After disgorgement, then, the Champagne is finished with a low dosage that enhances its balance and freshness. In the glass, it is a refined pale gold color, with a particularly fine perlage that feeds a rich, very persistent foam. The nose is delicate, with aromas of fresh citrus and white flowers. As the minutes pass, however, it also reveals itself to be a particularly complex wine, with notes of ripe sweet fruit and a subtle hint of yeast and bread crust. In the mouth it is balanced and very fresh. A Champagne of great pleasantness that can be appreciated on a thousand occasions. Perfect for an aperitif, the maison's technicians also suggest it in combination with delicate white meat and fish dishes. Great with a fresh salmon or tuna tartare.

The grapes, specifically, come from more than 50 different plots, among the best on the property. The story goes that it was Madame Clicquot who created the first Rosé champagne by blending in history. It was 1818 and "the widow" added a percentage of red wine to her Brut. The body of the Cuvée is based on the traditional style of Brut Yellow Label, consisting of 44-48% Pinot Noir, 13-18% Meunier and 25-29% Chardonnay. In addition, the blend includes a particularly high percentage of reserve wines from numerous vintages, guaranteeing the consistency of the Maison's style. These wines, some with more than 9 years of aging, are stored individually, respecting the origin of the crus and the vintages of production. The delicate and unmistakable color is guaranteed, today as in its origins, by the addition of a small percentage, about 12 percent, of red wines from different areas and selected to give the rosé a perfect balance. A coppery orange color, the aroma is expressive and characterized by aromas of strawberry and very ripe wild strawberries. In the mouth, on the other hand, it is full-bodied, structured and vinous, while maintaining an unaltered freshness. A pleasantly gastronomic champagne, this rosé has no trouble finding a place on any table. Excellent with flavorful fish such as tuna or swordfish, it can also accompany meat dishes such as beef carpaccio or even duck. There are also those who like to offer it as an end to a meal, perhaps to accompany a mouth-watering bowl of red fruits.
