Technically, they are called 'one-night wines', because the maceration of the skins required to colour the must lasts no longer than a few hours. And they can be recognised precisely by the beautiful shade of pink, typical for the region. Rohesia, an inviting rosé from Negramaro grapes offered here by Cantele, has all the characteristics to belong to this category. Cherry pink, the nose reveals an intense and persistent perfume, with hints of red berry fruit, strawberry, peach and cherry. But also floral, of rose and violet. Harvested in the second half of September, after vinification the wine matures on its lees for about 3 months, acquiring a pleasant complexity that in no way detracts from its freshness. Apulia, and in particular Salento, is a land famous throughout the world for the quality of its rosé wines, produced from good local grapes. The grapes, cultivated according to the dictates of organic viticulture, grow in the company's vineyards in Lizzano, in the province of Taranto. The aim is to create a fresh and fragrant rosé, rich in scents and flavours. For this reason, the grapes, harvested when perfectly ripe, are brought early to the winery to be processed. After prior destemming and crushing, the mass is divided into two halves. One part ferments in white. The other undergoes cryo-maceration for 6-8 hours to extract colour and fresh aromas. In the glass it has a beautiful bright coral pink colour. The nose offers a pleasant intensity, with notes of small red berries with delicate flesh, accompanied by a hint of dog rose. On the palate, however, it is enveloping and fresh. Balanced and perfectly consistent with what has been perceived previously. Good for a thousand occasions, this Salento rosé is extremely versatile. After processing, the wine then matures for 6 months in French oak barriques. A deep purple red, Negroamaro di Terra d'Otranto immediately reveals a complex and intriguing bouquet of spices, berries and jam. In the mouth, however, it reveals a nice body, a soft and harmonious sip, with well-integrated tannins. It definitely requires a high level of pairing, with savoury dishes of red meat or game. Also try it with a board of medium-aged cheeses.

With the Primitivo, Negroamaro is almost synonymous with Apulia. An indigenous variety of the region, in fact, this grape is used in purity to create various typical wines. Santoro Negroamaro, Puglia IGP, is Terre di Sava's interpretation of this interesting variety. A pleasant and immediate wine, it is the result of a careful processing of the grapes which have reached full maturity in the cellar. It starts with a thermo-controlled maceration phase and alcoholic fermentation grafted by selected yeasts. The whole process lasts about ten days, at the end of which, after racking, the wine is put into steel tanks for the subsequent ageing phase that precedes bottling. In the glass it has a beautiful red-purple colour, with black-purple reflections. The nose reveals an intense and persistent perfume. Pleasantly fruity, with hints of blackcurrants and berries. In the mouth, however, you discover a wine characterized by a good body. Velvety and harmonious, it has a long and savoury finish. Traditionally, Negroamaro is served with the classic meatballs with sauce, but also with a good legume soup or the famous roulades of offal cooked on the grill.

Another fine rosé signed by the Antinori family. We are talking about Furia di Calafuria, Salento IGT, proposed here by the Tormaresca winery. It comes from an unusual blend of Negroamaro, Cabernet Franc and Syrah grapes, all grown on the Maime Estate in the heart of Salento. The grapes, hand-picked and selected separately by variety, are destemmed and soft-pressed. The must obtained is cooled to obtain a natural clarification. It is then sent for fermentation in stainless steel tanks. Then, after a few months of ageing, again in stainless steel, in contact with its own yeasts, the various parcels are assembled to proceed to bottling. In the glass, Furia di Calafuria has a delicate pink, peach blossom colour. The nose is attractive, with notes of nectarine, pineapple and pink grapefruit accompanied by floral sensations of violet and lemon balm. In the mouth, however, it is pleasantly fresh, savoury and characterised by a pleasant citrus aftertaste. A versatile wine, it goes well with a wide variety of dishes. Perfect as an aperitif, it can also be served with hors d'oeuvres, fish or meat dishes and vegetarian dishes. For lovers of regional pairings, Furia di Calafuria goes well with burrata, for example. More generally, this wine goes well with sushi, sashimi and raw fish.

Monte dei Cocci is a pure Negroamaro, Puglia IGP, from Tenute Girolamo. In this case, the grapes come from Valle d'Itria, from vineyards cultivated at about 450 metres above sea level. Here the climate is mild and characterised by a beneficial temperature range between day and night that favours the perfect ripening of the grapes. The soil, rich in limestone, is composed of red soils, rich in minerals. After the harvest, the grapes are soon brought to the cellar to be subjected to a soft pressing, followed by maceration and fermentation, which in this case takes place entirely in French oak truncated conical vats. At the end of maturation, the wine undergoes a phase of maturation in barriques, also made of French oak, for about 6 months. The wine is then bottled and left to mature for a further 6 months in the cellar before release. Ruby red in colour with garnet hues, the nose reveals an intense and powerful bouquet, with notes of candied orange peel, mandarin, plum, pepper, cinnamon and floral aromas. In the mouth it is pleasantly tannic. Elegant, warm and enveloping. Precisely the tannic richness makes this wine suitable for meat dishes or savoury first courses.

Ageing takes place in oak barrels for a period of 12 months, allowing the wine to develop elegance and harmony. In the glass, Cappello di Prete presents an intense ruby red colour with garnet reflections. On the nose, a complex and enveloping bouquet, where notes of spices, liquorice and tobacco intertwine with hints of ripe fruit, such as blackberry and plum. In the mouth, however, it conquers with its decisive structure and character. Elegant and well-integrated tannins support a rich and persistent body, giving a long and satisfying sip, with a spicy and persistent finish. Undoubtedly to be served with savoury red meat dishes.
