Spring was characterised by two distinct profiles: the first, between March and September, enabled the plants to regain the water reserves thanks to frequent but not abundant showers, the second (August-September) was hot and dry favouring an optimal ripening and sugar concentration in the grapes.The following winter-like climate of the pre-harvest period determined a good acidity in the grapes that were not stressed by the dry and hot climate of August and September thanks to the good water reserves and to the vegetative and productive balance present in our vineyards.

An unusual Chardonnay for a southern white, this wine from Tormaresca is appreciated above all for its freshness to which is added a pleasant intensity of aromas. It comes from grapes grown mainly in Masseria Maìme, in one of the most beautiful areas of Alto Salento, not far from the town of San Pietro Vernotico. Here the Chardonnay is harvested only when it has reached perfect technological maturity and immediately stored in the cellar. After a soft pressing, the must is cooled and kept at a temperature of 10 degrees for about 24 hours in order to obtain a natural decantation. It is then fermented with selected yeasts in temperature-controlled stainless steel tanks in order to enhance the aromatic qualities of the grapes. The subsequent ageing of the wine continues in steel until the bottling stage. Thus one discovers a beautiful goblet characterised by a straw yellow colour with greenish reflections of great brilliance. The nose reveals fresh notes of orange blossom, thyme, rose and lavender. In the mouth, on the other hand, one discovers a wine of excellent freshness and minerality, with a savoury and fruity aftertaste. A wine of great balance, it is the ideal companion for the whole meal. From hors d'oeuvres to main courses, when fish is the star of the table, this is the wine that should not be missing from the fridge.

Torcicoda, Salento IGT, is a very contemporary interpretation of Primitivo. First Apulian wine among the best 100 wines in the world for Wine Spectator, it comes from grapes harvested with a slight delay compared to the ideal ripening, therefore slightly overripe. After pressing, maceration lasts for about two weeks in stainless steel tanks. During this phase, the wine completes alcoholic fermentation at a controlled temperature not exceeding 27 °C and is then transferred to French and Hungarian oak barriques, where malolactic fermentation takes place. For the final stage of maturation, Torcicoda is left to mature for approximately 10 months in barriques, and a further 6 months in bottles. Only then is the wine ready to be released on the market. Intense ruby red in colour with a light shade of violet, the nose is striking for its intense fruity notes of morello cherry and plum which combine with sweet spicy sensations of liquorice and vanilla. In the mouth the entry is soft and ample, with an elegant tannic texture that well accompanies a remarkable structure. The finish is long and persistent with a pleasant aftertaste of cherries in alcohol.

You think of Toscane and generally end up thinking only of its great reds. In reality, however, Tuscany offers a climate and terroir that are also particularly suited to the production of great white wines. The Maremma, in particular, is an area of Tuscany that is becoming increasingly popular for the production of white wines. The climate here is mild and Mediterranean, with hot summers and mild winters. The Maremma soils are also able to give wines great freshness, minerality and longevity. A fine example is this Vivia, a white DOC wine from the Maremma, made from Vermentino, Viognier and Ansonica grapes. Vermentino, in particular, present on all the Mediterranean coasts, finds a simply ideal habitat in Tuscany. As does the Ansonica, a native Tuscan grape, which produces fresh, mineral wines. Finally, Viognier, originally from France, produces fruity and spicy wines. The grapes are harvested by hand and vinified separately to preserve their freshness and liveliness. After blending, the three wines are then refined in the bottle for at least 6 months. Vivia is straw yellow in colour with brilliant greenish highlights. On the nose, the olfactory impact is intense and characterised by pleasant aromas of ripe fruit, such as pear, apple and pineapple, well in harmony with fine notes of orange blossom and chamomile. Elegant citrus and Mediterranean herb sensations reminiscent of sage complete the bouquet. On the palate, however, it is vibrant and savoury, with a final freshness that persists, showing hints of lemon and rosemary. Perfect with fish starters, white meats and seafood dishes. For lovers of territorial pairings, this Antinori house white is also perfect with Cacciucco alla Livornese.

Another fine rosé signed by the Antinori family. We are talking about Furia di Calafuria, Salento IGT, proposed here by the Tormaresca winery. It comes from an unusual blend of Negroamaro, Cabernet Franc and Syrah grapes, all grown on the Maime Estate in the heart of Salento. The grapes, hand-picked and selected separately by variety, are destemmed and soft-pressed. The must obtained is cooled to obtain a natural clarification. It is then sent for fermentation in stainless steel tanks. Then, after a few months of ageing, again in stainless steel, in contact with its own yeasts, the various parcels are assembled to proceed to bottling. In the glass, Furia di Calafuria has a delicate pink, peach blossom colour. The nose is attractive, with notes of nectarine, pineapple and pink grapefruit accompanied by floral sensations of violet and lemon balm. In the mouth, however, it is pleasantly fresh, savoury and characterised by a pleasant citrus aftertaste. A versatile wine, it goes well with a wide variety of dishes. Perfect as an aperitif, it can also be served with hors d'oeuvres, fish or meat dishes and vegetarian dishes. For lovers of regional pairings, Furia di Calafuria goes well with burrata, for example. More generally, this wine goes well with sushi, sashimi and raw fish.

The Castel del Monte DOC is one of the most prestigious in Apulia, covering around 1,500 hectares between the provinces of Bari, Barletta-Andria-Trani and Foggia. Here, the territory is characterised by a Mediterranean climate, with hot summers and mild winters, and clay-limestone soils, which give the wines a particular structure and minerality. Here Tormaresca produces Pietrabianca, a white wine from Chardonnay (90%) and Fiano (10%) grapes, organically grown on the Bocca di Lupo estate in the municipality of Minervino Murge, in the province of Bari. The Chardonnay grapes are harvested by hand and vinified in steel at a controlled temperature. The Fiano, on the other hand, is fermented separately, again in steel, to bring out its notes of freshness and acidity. At the end of the transformation, the two parts are blended and then follows a further 6 months of bottle ageing before final release. Pietrabianca has a brilliant yellow colour with greenish highlights. The nose amazes with its tropical notes of pineapple and lychee, combined with hints of orange blossom and peach. Fresh, citrus sensations and hints of hazelnut and vanilla complete the complex bouquet. In the mouth it is vibrant, with good freshness and great structure. The finish is pleasantly savoury. Good today, this white has discrete ageing potential. A versatile white, it goes well with a wide range of dishes. Perfect with fish starters, white meats and seafood dishes.
