You think of Toscane and generally end up thinking only of its great reds. In reality, however, Tuscany offers a climate and terroir that are also particularly suited to the production of great white wines. The Maremma, in particular, is an area of Tuscany that is becoming increasingly popular for the production of white wines. The climate here is mild and Mediterranean, with hot summers and mild winters. The Maremma soils are also able to give wines great freshness, minerality and longevity. A fine example is this Vivia, a white DOC wine from the Maremma, made from Vermentino, Viognier and Ansonica grapes. Vermentino, in particular, present on all the Mediterranean coasts, finds a simply ideal habitat in Tuscany. As does the Ansonica, a native Tuscan grape, which produces fresh, mineral wines. Finally, Viognier, originally from France, produces fruity and spicy wines. The grapes are harvested by hand and vinified separately to preserve their freshness and liveliness. After blending, the three wines are then refined in the bottle for at least 6 months. Vivia is straw yellow in colour with brilliant greenish highlights. On the nose, the olfactory impact is intense and characterised by pleasant aromas of ripe fruit, such as pear, apple and pineapple, well in harmony with fine notes of orange blossom and chamomile. Elegant citrus and Mediterranean herb sensations reminiscent of sage complete the bouquet. On the palate, however, it is vibrant and savoury, with a final freshness that persists, showing hints of lemon and rosemary. Perfect with fish starters, white meats and seafood dishes. For lovers of territorial pairings, this Antinori house white is also perfect with Cacciucco alla Livornese.
