Less known than other Apulian autochthonous varieties, Verdeca is an interesting grape, able to give life to wines of great pleasantness and aromatic richness. A grape that is often enhanced through careful vinification, with low fermentation temperatures and ageing in steel. The result, as in the case of this Valle d'Itria IGT proposed by Terrecarsiche1939, is a pleasantly fresh and immediate wine. The perfect companion for a snack of fresh fish, perhaps eaten right on the beach, with your feet still soaking in the water. The one proposed by the Apulian winery is a wine with a bright straw yellow color, with evident greenish notes. The nose smells of white flowers, honey and herbs. In the mouth it is balanced, with well-integrated alcohol and a lingering acidic note that makes it enjoyable for several minutes after drinking.

This fresh Salento IGP comes from a successful selection of white grapes typical of Salento, including Verdeca, Fiano and Malvasia Bianca. All grapes come from vineyards located on the hills of Salento, where the warm, temperate climate and lime-clay soils favour a balanced ripening rich in aromas. Winemaking here follows a modern process that begins with the destemming of the grapes. The grapes are then left to macerate for a few hours. A soft pressing follows, with subsequent cold static decantation to obtain a clear must. Alcoholic fermentation takes place in temperature-controlled stainless steel tanks and the wine then matures in steel for a few months before being bottled. On the nose, it has an intense, floral bouquet, characterised by notes of jasmine flowers and wild roses, with hints of tropical fruit such as pineapple and banana. In the mouth, however, despite its apparent simplicity, this wine is pleasantly elegant, fresh and delicate, with a discreet acidity that makes it particularly drinkable. The minerality of the soil is well perceived, giving the wine an interesting complexity. The finish is persistent, with fruity and floral notes.

Locorotondo DOC Superiore, Padre Abate is one of the most interesting wines produced by the Terrecarsiche1939 winery. 'Apulian to the core', this white wine comes from the clay soil of the Valle d'Itria, where the winery cultivates historic vineyards of Verdeca and Bianco d'Alessano, typical vines of the region. We are located at about 400/450 metres above sea level and the vines are still, in part, trained using the traditional bush system, ideal for producing quality, small quantities. Harvesting, in this case strictly by hand, takes place in the second half of September, after the grapes have had a chance to ripen slowly under the warm sun of our beautiful south. Fermented in temperature-controlled stainless steel tanks, the wine continues its journey before meeting the bottle for the final resting phase before reaching the shelves. Greenish yellow in colour, from the very first moment it is easy to grasp a delicate bouquet, with intense hints of Mediterranean scrub and fresh flowers. In the mouth, it is pleasantly dry, fresh and delicate. Perfect as an aperitif, this Apulian white is suitable for accompanying aperitifs and fish dishes. Impossible to be disappointed.

Verdeca is a grape that is relatively unknown to wine lovers. It is an autochthonous vine of our South that grows well on poor soils and in a very hot climate. The vineyards are located in a hilly area north of Taranto, about 150 meters above sea level. What contributes to the pleasantness of this wine is the natural temperature range between day and night which guarantees a long and complete maturation for the grapes. The processing in the cellar is simple but accurate. Controlled temperature, only stainless steel and selected yeasts are wisely used to give life to a pleasantly fresh wine with a very marked mineral character. Straw yellow, in the glass it reveals a rich and floral bouquet. Try it with seafood and shellfish.

Monte dei Cocci, pure Verdeca, is an IGP Puglia from Tenute Girolamo. We are located in the heart of the Itria Valley, one of the most fascinating areas of the region. Here the vineyards are located at about 450 metres above sea level, in an ideal position to fully enjoy a good temperature range that favours perfect ripening. The soils, rich in limestone and red soil, do the rest. After the harvest, the grapes are brought to the winery where the vinification phase begins. It starts with a soft pressing followed by the delicate fermentation phase, which takes place in steel tanks. The process is then completed with refinement in the bottle for about 3 months. Brilliant and luminous, yellowish with characteristic greenish reflections. In the mouth, the wine is pleasantly fresh, cheerful and pleasant yet full. A Verdeca with good character, perfect with light fish dishes or mixed starters.

A very special wine. Pure Verdeca obtained from a harvest carried out at the end of September, when the grapes have reached a perfect state of ripeness. The vinification is very particular and is similar, in some ways, to that of a red wine. It begins, in fact, with a long maceration on the skins that continues for about 20 days. Then, after racking, the wine is left to refine in steel for a period of at least six months before being bottled and left to rest in the cellar for another three. The result is not the classic drinkable and flowing white wine but an important and rich wine. You can tell by the way it looks. In the glass, in fact, it has a beautiful antique gold color, with orange glints. On the nose notes of acacia flowers, chamomile, carnation and elderberry. Then memories of peach in syrup and tea, against a delicately spicy background. In the mouth it is full and velvety. Well balanced by a pleasant freshness, savory and slightly astringent.

It is no coincidence that the beautiful label of this wine features the image of a fish. An anchovy, of course.
