At the end of aging on the lees in the bottle, an important dosage is added, amounting to about 45 grams of sugar per liter. The result is a sparkling wine characterized by incredible aromatic harmony, sweet but very fresh. Its ideal pairing is with caramel desserts, but also with coffee or pralines: Paris-Brest, tarte Tatin, caramelized pears. Also fabulous with a rich fruit salad.

This cuvée is the result of a skillful and delicate blending between a small proportion of vintage wine and a majority of reserve wines, including those aged in bottles for more than 15 years on the winery premises. Once the cuvée is created, the wine matures for no less than three years on the lees before being degorged with the addition of the liqueur d'expédition, in this case made from the same wines used in the blend, to maintain the most absolute stylistic consistency. A curiosity. As is often the case, dégorgement is mechanized. In Bollinger's case, however, an innovative machine is used that injects an inert gas inside the bottles as they are uncorked, preventing oxygen from penetrating and allowing a very low amount of sulfur dioxide to be used. In the glass, you discover a wine characterized by a beautiful golden yellow color, with fine, uninterrupted bubbles. Notes of ripe fruit, spices and candied apples are clearly discernible on the nose. Then biscuit and pastry notes. In the mouth it is immediately recognizable. Creamy and perfectly balanced by fresh acidity, it evokes notes of ripe fruit, such as pear, brioche and slightly spicy spices. Balanced between structure, power and liveliness. The style of the A ‘ house is unmistakable. The result is a wine that is strongly structured but with a clear and precise expression, aged on its lees in the bottle for at least 36 months. Antique pink in color, with a fine perlage that makes it very bright, the nose is pleasantly fruity, with distinct notes of ripe strawberry, currant and blueberry, against a buttery background with hints of cookie and almond. In the mouth, it is creamy but fresh. Pleasantly structured, long and lively, on the table it always knows how to give great satisfaction. Excellent with prawns or lobster, some people also enjoy it as an end to a meal, perhaps accompanied by a bowl of strawberries or raspberries au naturel.

On the nose it is elegant and exuberant. Fruity, citrusy and with notes of white flowers. Then more yeast, pastry and custard. on the palate, however, it is fresh and elegant. The same sensations perceived previously return, completed, however, by toasted aromas typical of the Dom Ruinart style. It is no coincidence that this is the Blanc de blancs the emblem of the house.
