Quattro Vicariati, here proposed in a magnum version, i.e. in a 1.5-litre bottle, is a Rosso Trentino Superiore DOC made from international grapes. It is, as they say in the jargon, an elegant Bordeaux blend, composed of 65% Cabernet Sauvignon grapes and the remaining 30% Merlot, to which is added a small percentage, about 5% Cabernet Franc. A (great) oenological gem signed by Cavit, produced with grapes from the area between Ala, Avio, Brentonico and Mori, in Vallegarina. This area, known as the Quattro Vicariati (Four Vicariates), is the southernmost in the region and is therefore the most suitable for the production of great red wines. Vinified in red, with maceration on the skins for about two weeks, after fermentation the wine is left to mature in barriques and small oak barrels for at least 24 months. Then, after bottling, follows further ageing in the bottle for about another 12 months. A red wine with an intense, bright ruby colour, the nose offers balsamic, plum, blackberry and tobacco sensations. In the mouth, however, it shows great balance, with typical notes of green pepper and ripe red berries. Savoury and soft, it has noble tannins and a long, enveloping finish. A red of fine character, this Quattro Vicariati is ideal with first courses dressed with tasty sauces, but also grilled meat and mature cheeses.
