Blìnc, Franciacorta DOCG from Contadi Castaldi, is one of Italy's most awarded wines. It has won numerous international awards, including one at the Decanter World Wine Awards. It is made from a blend of equal parts Chardonnay and Pinot Bianco grapes. Grapes that come from 37 vineyards located high in the hills. As expected, the grapes are hand-picked and softly pressed. The must decants statically under cold conditions and then ferments in stainless steel with selected yeasts. It then matures for about 7 months in stainless steel, after which it is bottled and left to rest on the yeasts for at least 30 months. After disgorgement, it matures for a further 3 months in the bottle. A wine of great complexity, the Franciacorta DOCG Blìnc has a brilliant straw yellow colour. The perlage is fine and persistent. The nose offers a broad and complex bouquet, with notes of yellow citrus fruits, almond, salt, broom and honeysuckle. In the mouth, it is elegant, fresh and mineral, with a full and persistent structure. To appreciate it at its best, this Franciacorta DOCG can be paired with fish dishes, shellfish and fresh cheeses. Contadi Castaldi's Franciacorta DOCG Pinònero Natura is an atypical wine, produced from 100% Pinot Noir grapes. A wine that stands out for its freshness, minerality and complexity. The grapes, in this case, come from different areas of Franciacorta. This blend of grapes gives the wine a unique complexity and richness of aromas. The grapes are harvested by hand and softly pressed. The must decants statically under cold conditions and then ferments in stainless steel with selected yeasts. Malolactic fermentation is carried out partially. The wine then matures for 7 months in stainless steel and barriques, and is then bottled and left to rest on the yeasts for approximately 60 months. After disgorgement, it matures for a further 6 months in the bottle. Pinònero Natura has a straw yellow colour with slightly orange reflections. The perlage is fine and persistent. The nose opens with a broad and complex bouquet, with notes of citrus fruits, pink grapefruit, wild strawberry, white flowers, lime, acacia honey and green oregano. The palate is crisp, fruity and fresh, with notes of citrus fruit and a lingering minerality. It goes well with fish dishes, shellfish and fresh cheeses. Zèro is the Pas Dosé, i.e. the driest of the sparkling wines produced by Contadi Castaldi. A Franciacorta made from Chardonnay and Pinot Noir grapes, grown in the heart of the territory of origin. One of the most representative wines of the company that is produced following a strict protocol to ensure style and quality. After a soft pressing to extract only the best part of the juice from the grapes, separate alcoholic fermentation of the two grapes takes place in steel. The wines obtained are left in contact with their own yeasts for a period of at least seven months, necessary to make them richer and more complex. During the same period, malolactic conversion is promoted, giving the base wines greater structure and softness. This is followed by blending and bottling and maturation on the lees for no less than 36 months, at the end of which disgorgement takes place and only wine is added to fill the bottle. There is no addition of sugar to alter or soften the wine. No artifice, no shortcuts. The result, however, satisfies the palate and the spirit. In the mouth, in fact, is pleasantly dry and very defined. Enveloping, savoury and above all long, in fact extremely long. A bubble that knows how to make us feel good.
