Its bottle is elegant, with the glass worked in relief. But in L'Ormarins Brut, Méthode Cap Classique made in South Africa, there is much more. First of all, this is a wine produced by Anthonij Rupert, a company that has been able to carve out an absolutely prestigious place for itself globally over the years. Then there is raw material of absolute excellence, the result of a magical mix of climatic conditions, soils and exposures. Pinot Noir grapes for 60% and Chardonnay for the remainder, in this case the harvest is done manually. Once in the winery, then, the clusters are pressed whole, without being destemmed beforehand, to obtain even clearer and more delicate musts. All batches are also vinified separately, and the resulting musts are allowed to rest on the skins before being inoculated with selected yeasts. After fermentation, then, the base wine is filtered from the skins and, after adding the sugars necessary to start the second fermentation, the wine is bottled and placed in the cellars to rest in the dark in a horizontal position. From the beginning of the process, the wine stays here for 24 to 48 months before being disgorged and dosed. This Méthode Cap Classique rosé is a beautiful coppery salmon-pink color in the glass, with delicate but persistent bubbles. The nose is intriguing, thanks to the obvious notes of fresh fruit, above all raspberries and cherries, and the savory note reminiscent of the sea. In the mouth, however, it has a natural freshness, with mouthwatering notes of fruit sorbet and lemon. Completing a very pleasant picture are hints of cookie and toast. The finish is persistent and elegant. On the table it goes well with appetizing dishes. Ideal with oysters and shellfish, it is also enjoyed with tasty seafood salads. Excellent, to tell the truth, even as an aperitif.
